One of the lactic acid bacteria that has potential to produce crude bacteriocin is Pediococcus acidilactici BK01, which result isolated from Bekasam. Crude Bacteriocin BK01 a high-temperature resistance 121°C, indicated by antibacterial activity E. coli O15: H7 and S.aureus ATCC25923 extensive pH stability against Escherechia sensitive proteolytic enzymes. still shows during 30 days storage at room, refrigerator, freezer temperatures. So can be recommended as bio-preservative in processed food products involving heating process.
